Shrimp Yuzi Tofu

Ingredients: 2 jade tofu, 3 eggs, 5 fresh shrimps

Remove the shrimp heads and peel off the shells (leave the shrimp tails), cut the shrimps from the back, pass the shrimp tails through the middle, and slightly arrange them into shrimp balls.

Put the processed prawn balls into a bowl, add a little white pepper, 1 g salt, and a little starch, stir well and set aside

Tofu is cut from the middle and cut into 0.5 cm thick slices

The sliced jade tofu is laid flat on the plate

Beat the eggs into a bowl and add 2 grams of salt to beat them thoroughly.

Put the beaten egg mixture into a dish lined with yuzi tofu, put it in a steamer, and steam it on low heat for 10 minutes

When the steamed egg liquid is solidified, put the marinated shrimp head out and the tail up in the middle of the egg liquid. After placing it, cover the lid and steam for six or seven minutes.

Take out, sprinkle a little chopped green onion to garnish, and drizzle with steamed fish soy sauce.
