Silver Cod Nishikyo-yaki

Combine sake, mirin and sugar and boil

Stir in Xijing miso, turn off the heat, stir well to form miso sauce, let cool and set aside

Sprinkle a small amount of salt on the silver cod and marinate in the refrigerator for half an hour

Take out the fish and wipe off the oozing water

Pour the miso sauce on the silver cod, let the sauce completely cover the fish, and marinate in the refrigerator for 24 hours

Take out the marinated fish, dry the excess sauce on the fish, and preheat the oven to 200°

Put the fish into the upper layer of the oven, with the skin facing up, and bake at 200°C for 10 minutes

Bake for another 2-4 minutes after turning it over, until a light burnt color appears on the surface

1. Xijing miso can be replaced with regular white miso
2. Marinate fish in miso sauce for at least 12 hours and no more than 2 days at most
3. In addition to cod, salmon or other fatty fish are suitable for this practice
