Simmered Straw Mushroom and Rice White

Wash the roots of the straw mushrooms, peel off the zizania roots and wash them.

Cut the straw mushrooms into three slices, and cut the bamboo shoots in half lengthwise, and slice them diagonally.

Boil water in a pot until the water boils, add sliced straw mushrooms, blanch for 1 and a half minutes, remove the water and set aside.

Soak the dried fungus in warm water for half an hour, remove the roots and wash. Boil the underwater fungus in a pot, blanch it until the fungus is foamed out, and wash it.

Put the base oil in the pot, 70% of the heat, adjust to medium heat, add the anise, sauté the green onion, ginger, and garlic, stir fry the water chestnuts until they are soft (about 2 minutes).

Then add straw mushrooms, fungus and stir fry, add oil, soy sauce, sugar, and fish sauce until the color is uniform, add water, reduce the heat to a simmer for 2 minutes, open the lid, collect the juice from the soup, and serve.
Tips:
Zizania sibiricum is like oil, stir fry more when frying, to prevent the surface of water stilbaria from becoming black; the seasoning can be increased or decreased according to personal taste.
