Simple and Easy Tofu Brain

Soak 100 grams of dried soybeans in advance.

The soaked soybeans are drained of water, and 1000 grams of water are added to make soy milk.

Soy milk is made of bean dregs and cooked in a pot. Turn off the heat and let it dry to 70-80 degrees.

Add 3 grams of dextrose lactone into the container and add 10 grams of cold water to dissolve it.

Pour the soy milk of two to 70-80 degrees into the internal fat liquid, stir it, and let it stand for 10-15 minutes.

Prepare the seasoning.

Put the solidified tofu brain into a bowl with a large spoon.

Add cold soy sauce, vinegar, sesame oil and ingredients.
Tips:
1. My taste is light and the soy sauce is salty, so there is no additional salt. Soymilk made with a heated automatic soymilk machine does not need to be boiled. 3. It would be better if you can put some small mustard pickles.
