Simple But Memorable Dish-vegetable Fried Potato Shreds

Two large potatoes, peeled, washed and shredded, then soaked in water for later use (I changed the water once)

Cut dried chili into sections, smash the garlic cloves with the back of a knife, smash the ginger with the back of a knife, and cut into large strips
