It's a bit exaggerated to call a thousand-layered pumpkin steamed buns... it's better to call it multi-layered.
It is delicious, relatively soft, and can be uncovered layer by layer.

Sliced Pumpkin Buns with A Mille Knife

1. Steam the pumpkin in advance, add 280 grams of cooked pumpkin and 50 grams of sugar to 500 grams of flour, knead it into a smooth dough, cover it with plastic wrap and leave it to ferment in a warm place.

2. The inside of the fermented dough is cellular.

3. Sprinkle some dry flour on the kneading pad and knead the dough until smooth.

4. Roll into a dough with a thickness of 4-5 mm,

5. Apply a coat of oil. Sprinkle with 2 tablespoons of white sugar and spread evenly.

6. Cut into eight pieces in the middle.

7. Fold it three times, fold the dough at a time.

8. After folding.

9. Put it on the steamer, cook it with cold water, start timing after the pot is boiled, and steam for 20-22 minutes.

10. Cut it open and have a look.

Tips:

The steamed pumpkin has a higher moisture content, so I didn't add water to it.
After steaming, be sure to simmer for a few minutes, wait for the heat to dissipate and then open the lid, otherwise it will shrink.
