Small Persimmon Bread

Weigh the ingredients and set aside.

Pour 40 grams of flour (within the weight) into 120 grams of water (within the weight) and stir evenly. Turn on a low heat and stir continuously to form a translucent texture. The soup is ready, let cool and set aside.

Press flat with the palm of your hand and brush with a layer of cooking oil. Place in a warm place to start the second fermentation (about 40 minutes)

Add an appropriate amount of cocoa powder to the remaining dough.

Knead it smoothly and divide it into 9 small portions (about 5 grams each) to make the lids for the small persimmons.

Roll into a round thin dough sheet.

Push it inward with a spatula, and cut a little at the link to form a shape like four petals.
