Small Stir-fried Beef

All the ingredients are cut and set aside

Cut beef into thin slices, add egg white, pepper powder, pepper, cooking wine, light soy sauce, green onion and ginger, mix well and marinate for more than 15 minutes

Add oil to the pan, add the green onion, ginger, dried chili and saute. (You can also add some prickly ash, pepper as much as you like)

Quickly stir fry the beef slices over high heat

After the beef slices change color, turn to medium heat and add green and red peppers and continue to stir fry for a minute or two

Add pepper powder and stir fry for a while, finally add salt and sugar to taste
Tips:
1. Adding egg white when marinating beef can make the meat tender. It is best not to omit it.
2. The process of frying beef should not be too long, otherwise the quality of the meat will easily become old. If the novice is not able to master it, you can fry the beef first, then fry the chili, and finally add the beef and stir evenly.
3. If you like the soft taste of chili, you can also follow the second technique.
4. If you eat spicy food, you can add some spicy millet.
