Small Yellow Croaker with Thai Sauce

Scrape up from the tail of the fish with the tip of a knife, and remove the scales of the yellow croaker

Cut the fish maw, remove the internal organs, and then clean it

Drain the fish slightly, sprinkle some salt on the fish and spread it all over, then cover for about 10 minutes

Soak up the marinated small yellow croaker with a kitchen towel or use a towel to dry the water on the fish

And pat the starch up and down all over the fish

Turn on a low heat and pour oil on the pot

Put the small yellow croaker on the wok and fry on a slow fire. When one side is fried until golden, turn and fry the other side until the fish is cooked

Tips:
1. If the small yellow croaker finds it troublesome to cut the fish at home, ask someone to cut it in the market;
2. When frying the fish, use a low heat throughout the whole process. If you want to know if the fish is suitable for turning, you can use the pot to gently push the body of the fish. If the fish can move, you can turn it over;
3. In the prepared sauce, fish sauce is indispensable. Although some people don't like it, the taste of fish sauce cannot be tasted when matched with those kinds of sauces;
4. Shredded green pepper is the last thing I want to add, because it can add a hint of spiciness to make it more palatable, or it can be replaced with shredded red pepper.
