Smooth Tofu

Prepare soft tofu, shiitake mushrooms, green onions, ginger, and red peppers.

Soak the mushrooms in advance. Wash and cut into small pieces; cut green onion and red pepper into sections, and shred ginger. Adjust the starch with water and set aside.

Heat oil in a pot and sauté the scallions and ginger.

Rinse the tofu with water; cut into small pieces.

Add salt, pepper, and light soy sauce, and push the tofu with a spatula. The action should not be too large to avoid frying.

Add the starch juice and quickly push it evenly; boil, adjust the flavor, and put it on the plate.

The smooth tofu can be served on the plate after adjusting the flavor.
Tips:
1. Tofu can be steamed for a while, and it will not break easily when cooked.
2. The starch juice must be prepared in advance.
3. The tofu is too tender, and it will break if the action is too large, which will affect the appearance of the dishes.
