Soba Noodles

1. 1. Put the kelp and shiitake mushrooms into the water and boil on high heat, then cook for another 10 minutes on a low heat. After turning off the heat, take the kelp and steam it in a small pot for 5 minutes.

2. Put the sugar (1⁄3 cup) and cooking wine (1⁄3 cup) into a low heat and cook for another 5 minutes.

3. Shred seaweed, mince radish, mince green onion, and shred radish.

4. Soba noodles are boiled in boiling water for 5 minutes, then remove, put in cold water and knead to remove water.
*Tip-Stir the dough evenly without sticking together.

5. Add cold water to the cold oil to make seasonings.

6. Put the noodles on the plate and pour the perilla oil juice on the edge.
*Tip-Mustard is added according to personal preference.
