Sophora Pancakes

Wash the Sophora japonica and remove it (no need to control water)

Wash the leeks and cut them into small pieces (not too many leeks, if one person is enough, just put a few leeks, I made 3 people, so I put a little more)

Put the leeks in the locust flower pot, add two eggs, an appropriate amount of salt, and mix well

Add the flour in batches and stir evenly until it feels a little sticky (if you add too little flour, it will fry very loosely, if you add too much flour, it will be very hard, so you need a moderate amount)

After heating the pan, pour a little more oil in a dish

After the oil is hot, adjust the heat to medium and low, put the stirred Sophora japonica flowers in, spread it into a cake shape with a wooden spatula (I made a three-person portion, so I fry it in two pots)

Turn the pancakes every 2-3 minutes

After turning it three times, it will be out of the pot
9.
Place the bottom of the dish with absorbent paper, serve it to the table, and eat it while it's hot!
