Sour Radish Trotter Soup

Wash the purchased pig's trotter, add appropriate amount of water, ginger slices and green onion knot to the pot, add the pig's trotter to blanch water.

After boiling, remove the foam, remove the trotters and wash them with warm water, and drain the water.

Add an appropriate amount of water to the electric stew pot to heat up, then add the trotters and start to simmer.

Peel the lettuce and cut it into hob pieces. Remove the roots of the enoki mushrooms and wash them for later use. Prepare your own pickled radish, pickled ginger and pickled pepper.

Start the frying pan, this time I use chicken fat, add a spoonful of yellow lantern chili sauce and stir well.

Add sour radish, pickled ginger and pickled peppers and stir fry together. Add cooking wine, then add lettuce and stir fry.

This is pig's trotters simmered for 2 hours in advance, and the soup is milky white.

Pour all the pork knuckle soup into the lettuce and sour radish pot, boil, put in the stewed trotters, boil again and simmer for 15 minutes on medium and low heat.

Add salt and sugar to taste.

Add enoki mushrooms before boiling, top with a little fresh lemon juice and sprinkle with green and red pepper rings.

Tips:
If you want the soup to be golden brown, add pumpkin puree, because the yellow lantern chili sauce is too spicy, my family can’t stand it
