Soy Simmered Trotters

Prepare the trotters and ask someone to chop them into small pieces when you buy them.

Wash the soybeans and soak overnight.
3.
Put the trotters into the pot, add cold water, blanch and cook until there is no blood, pick up and wash.
4.
Put the blanched pig's knuckles into sand choshi and simmer in a coal stove for two hours.
5.
Add soy beans.
6.
Bring to a boil on high heat and continue to simmer for 1 hour on low heat.
7.
Add ginger slices.
The simmered pig's trotters soup is mixed with salt and black pepper into a bowl and ready to be eaten.
