Soy Soy Trotter

Soak the soybeans in clear water one night in advance, and keep them in the refrigerator in summer.

Wash the pig's trotters and put them in a pot, add water, ginger slices, peppercorns, and ginger slices to blanch water

Boil for 2 minutes after the water is boiled, remove and rinse

Add appropriate amount of vegetable oil and crushed rock sugar to the pot, fry until the rock sugar melts

Add pig's trotters and quickly stir fry and coat with sugar

Add ginger, star anise, cinnamon and bay leaves

Add light soy sauce, dark soy sauce, salt and chicken powder to taste and stir fry for a few minutes

Add rice wine and stir fry

Add the water soaked in the trotters, cover and simmer for 10 minutes

Add the soaked soybeans and continue to simmer for about 40 minutes until the trotters are soft and waxy and the soybeans are crispy
11.
Turn on high heat to collect the juice
