Soy Trotter Soup

Soak the soybeans in water for more than 1 hour after washing.

Soak the trotters, wash them well and drain off the water.
3.
Put the cleaned trotters into a pot of cold water, and continue to boil for more than 5 minutes after boiling.

Remove the trotters and rinse them with running water.
5.
Put the trotters and soaked soybeans in a casserole, add appropriate amount of green onions and ginger.

Add enough water to the casserole all at once.

Put the casserole on the stove, cover the pot, turn to a low heat and boil for 1.5-2 hours after the high heat is boiled.
8.
Sprinkle an appropriate amount of salt to taste before serving, and put it in a soup bowl.
Tips:
1. Choose smaller trotters with less fat and not too greasy to eat.
2. Ask the seller to help clean the hair on the trotters when buying. After going home to blanch the water, check it again and remove some small hairs.
3. Add enough water to start stewing at one time, there will be loss in the middle. If you feel that there is too little water in the middle, you must heat the water.
4. After the big water is boiled, turn to low heat. As time goes by, the soup will become thicker and whiter.
5. After the soup is simmered, add appropriate amount of salt to taste.
