Spicy and Crispy Lotus Root

Peel the lotus root, wash it, and cut it into slices about one centimeter.

Then cut into small dices of one centimeter square

Soak lotus root in clean water for later use

Mix white granulated sugar, old vinegar, and sweet chili sauce to make a sweet and sour sauce. Stir as much as possible to make the sugar more dissolved.

Heat the pot, add a little oil, put the ginger and garlic in it and fry it for a fragrance

Drain the lotus root, pour it into the pot and stir-fry

Add salt and chicken bouillon, stir fry for about 30 seconds

Pour in the adjusted sweet and sour sauce and stir-fry until the lotus root is fully cooked.

Sprinkle in chopped green onion and serve

Tips:
White granulated sugar can also be replaced with yellow rock sugar or ordinary rock sugar, but it must be crushed and melted first. This dish has a sweet and spicy taste. You can also use sweet and spicy sauce, using only sugar and vinegar to make a purer sweet and sour lotus root.
