Spicy Cold Rice Noodles

Wash the rice noodles, put them in a pot and cook them, add more water when cooking, and cook until they can be broken with chopsticks.

Take a shower in cold water, then soak in cool boiled water for several hours

Shred the red pepper and carrot, marinate with a pinch of salt for two minutes

Then add the cucumber shreds and soak in salt water for a few minutes (I use the salt water from my own kimchi jar, it tastes good, soak in two minutes to taste)

Put spicy red oil, pepper oil, sesame oil, light soy sauce, chopped green onion, ginger, garlic, red pepper shreds, carrot shreds, and cucumber shreds in the rice noodles, and mix well

Put the cooked salted duck eggs in and serve
