Spicy Crayfish

Soak the crayfish in clear water, and then prepare to remove the gills and the shrimp thread.

Catch the crayfish bag with two tongs to fix the crayfish. Be careful when handling crayfish, don't get caught in your hands, some of them will help you deal with them from time to time.

Pull out the crayfish's gills as shown (because I dare not pack living things, this chubby hand is my husband's drop

After pulling off the gills, turn the crayfish over. Be careful not to pinch the top piece of the crayfish tail with your hands. Twist it left and right, and pull the shrimp thread gently. Then use clean water to soak, now this season there are almost no crayfish in clean water, some shells are very dirty, you can use a toothbrush to give the crayfish a bath~

To prepare the supplements, I used millet peppers, because they are more spicy, so I don’t need to add too much to avoid waste. The peppers, sesame pepper, Chinese pepper, tangerine peel, cinnamon, angelica, grass fruit, and nutmeg mentioned above are all added according to your own taste. If you like the taste a little stronger, put a little more, garlic cloves will do. Use a bag of Pixian hot sauce One-third of it.

Heat oil in the pot and put a little more than usual in cooking.

After the oil is hot, fry the ingredients first.

Here comes the secret recipe: I don’t add water to the crayfish soup, but use beer. The taste will be very pure! I use Harbin Beer, other cards are fine~

Use 3 cans of beer for 2 catties of crayfish. Bring to a boil on high heat, then turn to low heat after boiling.

Stir-fry on low heat until the crayfish has absorbed all the soup, then turn to high heat and continue to collect the juice. If you want something more juicy, that's it.
