Spicy Crispy Fish

Small dried red peppers, peppercorns, and fennel. The small dried red peppers should be cut into dices with scissors.

Kill the fish, wash it, sprinkle it with cooking wine, and marinate for 30 minutes. Then dry the water and put it in the pan for later use.

Prepare white sesame seeds.

Put the salad oil in a double-sided frying pan. When the oil is 60% hot, add the small fish and fry them over a low fire until golden on both sides.

Remove and fry again in ordinary oil pan until crispy and remove.

Add salad oil in another pot. When it is 50% hot, add pepper and fennel and fry it to create a fragrance.

Turn off the fire at this time. When the temperature of the oil in the pan drops to a cool temperature, add the chopped small dried red peppers.

Tips:
(1) The oil temperature of fried fish should not be high. Otherwise, it will be pasty on the outside and not crisp on the inside.
(2) Deep-fried small red peppers and white sesame seeds should have a low oil temperature. Turn off the fire. So as not to fry the sesame and chili.
