Spicy Diaozi Fish

Diaozi is cleaned, drained, and marinated for one hour with a small amount of salt, cooking wine, and pepper, and then air-dried.

Prepare minced garlic, minced ginger, dried chili, pepper, red pepper rings, white sesame seeds, stock, sauce: light soy sauce, dark soy sauce, cooking wine, a small amount of vinegar, sugar

Heat the oil in the pot and deep-fry the Diaozi fish. Don’t fire too much, just turn light yellow

The fried fish is slightly cold, and then re-fried until it is completely crispy, and the surface is golden and the oil is removed.

Stir fragrant pepper and dried chili on low heat, remove and set aside

Add minced garlic, minced ginger, red pepper rings and sauté until fragrant

Pour in the seasoned sauce and broth and bring to a boil

Add in the fragrant Chinese pepper and dried chili, and cook the sauce until it thickens

Add some oyster sauce

Add the deep-fried Diaozi fish and stir fry quickly, coat with the sauce, then sprinkle in white sesame seeds, drizzle with a spoonful of sesame oil, and it will be out
