Spicy fried clams is said to be a very popular delicacy recently. I did not make it to follow the popularity, because my son and I love this dish too much. We cook this dish every other time, and will not change the taste. I only love this flavor, slightly spicy, and will not overwhelm the original flavor of the clams. After being fried, I can see the bottom of the bowl when I sit in front of the TV for a while.

Spicy Fried Clams

1. Prepare the seasoning, cut the shallots, white and green onion leaves separately

2. Ask the stall owner when buying clams, I bought the ones that have been spit out the mud and sand. Wash them and pick them up.

3. Pour oil in a hot pan, add ginger, garlic, and scallion to the warm oil for a fragrance

4. Pour the clams and stir-fry evenly

5. When the mouth is slightly open, pour in rice wine or cooking wine

6. Pour the lemon steamed fish sauce

7. Add oil chili when it's almost burning

8. Add the chopped green onion and turn off the heat

Tips:

1. You can use fresh soy sauce instead of steamed fish sauce with lemon
2. The tastes of each company are different, please season it according to your own taste
3. The clams have a natural salty taste, so you should try the taste first before seasoning
