Spicy Fried Fat Intestine

The pig intestines are bought back, washed and soaked repeatedly with vinegar and salt until they are clean and there is no peculiar smell.

Add water, cooking wine, soy sauce, green onions, ginger slices, star anise lid and valve to the pressure cooker.

Turn the high heat to a medium-low heat and cook for ten minutes. Turn off the heat and simmer for two minutes to remove the air. Don’t simmer for too long.

The cooked pork intestine is cut into sections diagonally.

Add the fatty intestines and stir fry a few times, add appropriate amount of cooking wine, soy sauce, and dark soy sauce and stir fry a few times.
