Spicy Hot Pepper Duck

Wash celery and cut into small pieces.

Wash the ginger and garlic, peel and shred, remove the stalks and cut into small pieces for later use.

Cut the duck into pieces, blanch it in boiling water and drain it for later use.

Put the oil in a pot, add shredded ginger, garlic, and red 99 spicy roast chicken seasoning until fragrant.

Stir fry the duck meat until the duck meat changes color, add cooking wine and soy sauce in the middle.

Pour in the right amount of boiling water (the water level is enough to submerge the duck meat). Turn to low heat and simmer for 10 minutes until the duck is cooked through.

Add hot peppers and celery to stir-fry to collect the juice before starting the pan.
Tips:
Adding cooking wine can remove fishy, soy sauce can enhance the color of duck meat.
