Spicy Saliva Chicken

Wash the chicken drumsticks, put in cold water, and put them in order: cooking wine, rice wine, red wine, ginger, green onion, star anise, bay leaves, pepper, cumin grains.

After the high heat is boiled, turn to medium heat and cook for 15-20 minutes.

Simmer for 5 minutes.

After the stewed chicken drumsticks are taken out, they are quickly placed in ice water and chilled.

Remove the chicken drumsticks after cooling and let them dry. (If there is one, use a kitchen towel to soak up the water. If not, use this method to dry it like me.

Mix cooked peanuts and sesame seeds and mash them with a pestle and mortar.

Just mash it into fine particles.

To prepare the sauce, the ratio of light soy sauce, vinegar and sugar: 2.5:1:0.5.

Put a layer of sesame oil on the drumsticks after allowing them to cool.

Chop into pieces and put them on a plate.

Sprinkle with peanuts and sesame seeds.
12.
Pour the sauce that you started to make.

Finally, pour a layer of red oil and sprinkle with shallots. So it can be served.
Tips:
1. If there is no red wine, you can leave it alone. I put red wine to increase freshness.
2. When cooking the chicken legs, if it is difficult to determine whether they are cooked thoroughly, you can use chopsticks to penetrate the chicken legs after about 15 minutes of cooking.
3. The cooked peanuts and sesame seeds don't need to be crushed too much, they can be granular. (This depends on personal taste)
4. The sauce must be adjusted according to personal taste. I don't particularly like to be jealous, so I use less vinegar.
5. Sesame oil is called sesame oil in our south, which is the oil ground from sesame.
