Spicy Scallop

Remove the sand sac from the scallop meat, wash and set aside.

Let’s make a simple chili oil, 1 teaspoon thick chili noodles + 1 teaspoon fine chili noodles, mix well, add 1 teaspoon white sesame seeds

Add 1 small piece of cinnamon, green onion, two star anise, bay leaves, and 20 peppercorns in a cold pot with cold oil, and fry it over low heat to create a fragrance.

After frying the flavor, remove the peppercorns, cinnamon, bay leaves and other spices.

When the oil temperature drops to 60% hot, pour the oil on the chili powder.

Put water in the pot, add the green onion and ginger slices after the water is boiled, add the processed scallop meat to blanch water.

Add 2 teaspoons of umami soy sauce to the blanched scallops, 1/2 teaspoon of oyster sauce, a little chicken powder, a little sugar, a little pepper powder, and top with chili oil.
