Spicy Small River Prawns

Wash the shrimps clean and control the moisture (you can use kitchen paper to absorb the moisture)

Chop the green onion, ginger, and chili (If you don’t like ginger, you can cut the ginger into large slices or long strips so that you can pick them out when you eat).

Put the cold oil in a hot pan (add a little more oil) into the pepper, fry the pepper on a low heat and remove the pepper.

Turn on high heat, add green onion, ginger, chili, and stir fry the shrimp.

Stir-fry on high heat until the shrimps turn red, all the water vapor is dried, add light soy sauce, stir-fry with sugar, stir-fry evenly with appropriate amount of salt.
Tips:
1 Fresh small river prawns have high water content, so you must control the water content. Put a little more oil and stir-fry on high heat so that it can be burnt on the outside and tender inside.
2 Peppers can be increased or decreased according to your own taste or left alone.
3 Don't fry too much shrimp at one time due to temperature restrictions.
