Spicy Small Screws

Clean the screws and put in half a spoon of salt and mix them evenly. Breed for about a day so that the screws can spit out the mud and sand in the stomach (the water must be changed several times during this period, and the dead screws that have no openings floating on the water are picked out and thrown away. Cut off the end of the screw before cooking

Prepare chopped green onion, ginger shreds (do not cut too thin), remove the seeds of dried chili and cut diagonally into small sections

After the oil is hot, add shredded ginger, dried chilies and 1/3 of the chopped green onion and sauté

Pour in the screws and stir fry for about 1 minute

Add cooking wine and salt separately

Stir the fresh soy sauce, dark soy sauce, vinegar and sugar evenly, then pour in an appropriate amount of water, cover the pot and simmer for 3-5 minutes

Finally, heat up the sauce, add white pepper and the remaining chopped green onion before starting the pan, stir well, serve and enjoy slowly!
Tips:
1. Dead screws will be very smelly, will float on the water, and will not stick their heads out, so they should be picked out so as not to affect the taste
2. If you can’t suck it out while eating, you can pick it out with a toothpick and eat its head
