Spicy Stir-fried Bamboo Razor Clam

Ingredients: Razor clam with bamboo tube.

Wash the razor clams out of the mud.
3.
Get the meat out of the shell.
4.
Set a plate with green leaf lettuce and razor clam shells.
5.
Boil water in a pot, add cooking wine, add razor clam meat, and blanch it with water. Scald evenly to remove.

Heat oil, saute chives and ginger.
7.
Add chili sauce and sauté until fragrant
8.
Add the blanched razor clam meat.
9.
Heat up and stir fry evenly.
10.
Season with a little salt, stir well and turn off the heat.

Put it out of the pot and serve on the table.
Tips:
1. After washing the razor shells on the plate, they must be scalded thoroughly with boiling water before they can be used.
2. Blanch the razor clam meat with boiling water in advance, first to remove the fishy, and second, to make it easy to be cooked thoroughly during frying.
