Spicy Tofu

The meat slices are sizing by adding egg white, salt and starch.

Cut the tofu into small cubes.

Wash the leeks and cut into sections.

Tofu, add a small amount of salt in boiling water and cook until it is ripe.

Remove the cooked tofu from the dry water.

Put oil in the pot and sauté the peppercorns.

Add bean paste and pickled peppers, stir fry until red oil is formed.

Add the meat slices and stir-fry until the meat slices turn white.

Add green onion, ginger, white sugar, soy sauce, cooking wine, salt, and chicken essence and stir fry.

Put tofu and stir fry.

Put a little bit of water, and when the juice is collected, the water starch thickens. Sprinkle the leeks and stir-fry evenly.
