Spicy Xo Sauce

Remove the red onions from the surface and chop them into fine pieces. (I shed tears while cutting it!)

The scallops and dried shrimp are soaked in water to soften, then steamed in water for 20 minutes.

Chop the dried shrimp with a knife, and knead the scallops into filaments.

Put a lot of oil in a hot pan, sauté the shallots, pour the dried shrimp and scallops, and cook them over low heat.
5.
Pour the seasoning and continue to low heat.
6.
Cook until it changes color, taste it, if OK, turn off the heat to cool and bottle.
