Spinach in Soup

After washing the spinach, blanch it in water and blanch until it is dead. Remove and drain for later use. When blanching, you can add a little salt and cooking oil to keep the spinach green.

Dice ham, preserved egg and salted egg separately.

Put oil in the pan, add diced ham, diced salted egg and diced preserved egg in turn and stir fry.

Then add some broth or water, boil, add a little sugar and salt to add freshness and seasoning.

Place the blanched spinach into the bottom of the bowl.

Pour in the stock sauce and sprinkle with chopped green onion.

The savory spinach soup is complete.
Tips:
Blanch the spinach until it is cut off. Don't blanch it for too long; in the later period, add less salt and it will be salty.
