Spine Seaweed Soup
1.
Dried kelp
2.
Wash the dried kelp in advance, soak in cold water for a day, change the water several times in the middle to prevent arsenic residue, and shorten the soaking time appropriately in hot weather
3.
Cut the soaked kelp into a diamond shape for later use
4.
Wash the pork spine, chop into small pieces, and blanch
5.
The spine should be blanched for a short time, and the water can be removed after 2 minutes to reduce the loss of nutrients
6.
Put one-third of the height of boiling water in the pressure cooker, add the blanched spine and half a spoon of vinegar, add valve to high heat and cook for 20 minutes, turn off the heat to cool
7.
When the pressure cooker can be opened (or use cold water to cool down and then open), put in the kelp, add salt, add valve to high heat and continue to cook for 10 minutes
8.
Turn off the heat and uncover the lid after it cools down naturally
9.
Serve and eat
Tips:
1. The pork spine itself tastes delicious, almost no need to add any seasoning, just blanch the water to remove the fishy, you can also add a piece of ginger and stew to remove the fishy taste;
2. The spine contains a certain amount of fat, which is not suitable for obese people and those with high blood lipids;
3. Kelp has high iodine content, hyperthyroidism and pregnant women should not eat more;
4. There is no ready-made calorie value for the spine. A bowl of soup (two or three pieces of meat) is suitable;
5. Regarding the nutritional content of food ingredients, quoted from "How to Eat Diabetes" P56 and 71.
