We will deep-fried spring rolls here every Chinese New Year, when the whole family gathers together on New Year's Day; when relatives visit, they will also prepare this snack.
I remember when I was young, I liked eating fried spring rolls when there were many people. The chef at home will fry the spring rolls before meals. When some of our children heard that they were going to fried spring rolls, they would rush into the kitchen. Surrounded by the chef, put the raw spring rolls into the frying pan, the sound of "sizzling" is nice and inviting. When the spring rolls were golden on both sides and picked out with chopsticks, we couldn't wait to eat them. The adults sitting by the side, chatting and chatting with melon seeds, saw this scene, and yelled not to burn it!
As time goes by year after year, we have changed from children watching the fried spring rolls to adults who can sit quietly and chat. However, the taste of spring rolls has never changed, and the New Year scene of eating fried spring rolls in a happy and lively manner has been preserved until now. I want to reproduce the same scene year after year. Perhaps in this ever-changing life, everyone most wants to keep the traditional taste of the year.

1. Turn on high heat, pour appropriate amount of oil into the oil pan, add the minced meat and stir fry; then add the leek sprouts and continue to stir fry, add a little water, cover and simmer for 5 minutes. Uncover the lid, add an appropriate amount of salt, stir fry, and let cool on a serving plate.

2. Use chopsticks to put an appropriate amount of leek bud minced meat filling on the spring roll wrapper, and just roll it up as shown in the picture below.

5. Turn on high heat and pour 2/3 of the oil of the last spring rolls into the pot. When the oil is slightly warm, put the corresponding amount of spring rolls according to the size of the pan (I put 5 rolls), push the spring rolls with a spatula, about 2 to 3 minutes, turn it over. When both sides are golden and crispy, remove and serve.
