During the Chinese New Year, we all have steamed bowls here, and at least four types are steamed, steamed fish nuggets, chicken nuggets, slivered meat, and crispy meat. This is a must. It has been passed down in the family for many years. Steamed small crispy pork can be served directly or buckled out to serve. There are two different ways to serve. Choose the one and put it in that way. Today I used a relatively lazy way, steamed it directly on the table, and did not buckle down. The small crispy meat is fried first and then steamed. The steamed meat is very soft and rotten, and can be eaten by the elderly. I have a 80-year-old mother-in-law who has bad teeth. She likes to eat this little crispy meat, so she must have this dish for the Chinese New Year.

Steamed Crispy Pork with New Year's Eve Vegetables and Hard Vegetables

1. The pork front thigh I use is lean. Cut into large pieces with a thickness of 4--5 mm.

2. Rinse with clean water to remove the blood

3. Pour into a mesh sieve to filter out the water.

4. Add salt, five-spice powder, soy sauce and ginger, mix well, marinate for half an hour

5. Pick out the shredded ginger after marinating.

6. The ratio of sweet potato starch and flour is 1:1.

7. Add 200 grams of water to make a thick paste.

8. Pour the batter into the meat slices.

9. Grab and mix evenly

10. The oil is 50% hot, fry it in the pan, and put it into the pan piece by piece to avoid sticking.

11. Fry until golden brown and remove.

12. Before steaming, put some vegetarian dishes on the bottom of the bowl, the bamboo shoots I used and the fried lotus root.

13. Then put the fried small crispy pork on top, put some green onion and ginger.

14. Add a little soy sauce

15. Appropriate amount of salt, the amount of salt is subject to the requirement of vegetarian dishes.

16. add water

17. Basket steam for an hour.

18. It can be served directly after steaming

Tips:

1. I use pure lean meat for deep-fried small crispy pork. You can also use some fat or pork belly according to your preference.
2. I fry a lot of small crispy pork at a time. For the New Year, I can fry a little less.
