Steamed Hairy Crabs

Put the hairy crabs in a basin, put in clean water, about 2/3 of the size of the crabs, soak them for 3 to 4 hours, and let them spit out the dirt.

Use a small brush or toothbrush to carefully clean the crabs under running water

Boiled: Put the crab in the pot, add water, about 5cm below the surface of the crab, add a little salt, a few pieces of ginger and a few pieces of perilla leaves

Cover the pot, turn the heat to a low heat and cook for about 12 to 15 minutes. Turn off the heat and simmer for 1 minute. The cooking time depends on the size of the crab.

Steaming: Pour plenty of water into the pot, add ginger slices, perilla leaves and a little salt

Put the crab belly up into the steaming tray, put it in the steaming tray, cover the pot, boil on high heat, keep it on the heat, and steam for 12 to 15 minutes.

While steaming, prepare the dipping sauce: mince ginger, add appropriate amount of vinegar, and you can also add chopped perilla

Remove the steamed crabs from the rope
