Steamed Mandarin Fish

Kill the mandarin fish with a knife on both sides of the fish body and place it on a plate. Spread cooking wine and salt on the belly and body of the fish, and marinate for 10 minutes.

Peel the ginger and slice it, put a few slices of ginger under the fish body, then insert other slices of ginger into the fish body, put a few green onions, and put 2 slices of ginger and one green onion in the belly.

Shred green onion, ginger, and pepper.

Put oil in a small frying pan.

Add water to a boil in the steamer, put the mandarin fish in the water and steam for 10 minutes, then remove the soup. Remove the sliced ginger and shallots, pour in steamed fish soy sauce, and then add shredded ginger, shallots and chili. Heat the oil in a small frying pan to high heat and pour it on the shredded green onion, ginger, and chili.
