Steamed pork ribs with sour plum noodles and black soy sauce is a home-cooked dish of Hong Kong people, but it is rare in restaurants.
My teammate is a northerner. Steaming ribs is totally unacceptable to him. He always feels that ribs are not familiar. Maybe because of this, his teammates are now vegetarian. What a pity.
Today, my teammates went out for dinner with my colleagues. I improved the steamed ribs by myself and switched to electric pressure cooker. It is better for any pot, and steaming is still tenderer than boiled meat.
The noodles that can be bought in Hong Kong markets do not seem to be available in Beijing. Soy bean paste is used instead.
The finished product is a little sour, not greasy at all, and the food is good."

Ingredients

Steamed Pork Ribs with Sour Plum Noodles and Black Beans

1. Choose a small row, the ribs are fine, you want small pieces, the less the better. Wash the ribs with boiling water two to three times.

2. Add soy sauce and sour plums.

3. Mix well and marinate for 20 minutes.

4. Put water in the pressure cooker, press the ribs mode, and steam over water for about 20 minutes.

5. Add a little wah.

Tips:

If it is steamed in a pot for about 30 minutes or more, the meat will be a little bit thinner.
