Really salted fish should be an indispensable dish on every table. There are too many versions of real salted fish. I can't say that my version is the best. I especially like the chilli in steamed salted fish. The steamed salted fish has a faint green pepper flavor, which is very good. I usually steam a bit more, enough for the family to eat for two days.

Steamed Salted Fish

1. Wash the salted fish with water (if the salted fish is very salty, soak in water for 10 minutes), shred the green onion, and shred the ginger for later use.

2. Cut the pepper into small pieces, cut a few knives on the salted fish, don't cut off the salted fish.

3. Put a few shreds of green onion and ginger in each salted fish maw.

4. Put the salted fish on the plate.

5. Spread ginger and green onions.

6. Spread the chopped peppers.

7. Pour an appropriate amount of cooking wine.

8. Pour in the right amount of cooking oil (do not use soybean oil, the oily taste of soybean oil is too strong, which will affect the umami taste of salted fish)

9. Finally add a few peppers.

10. Put the salted fish in a steamer on fire and steam for 20 minutes after the water boils. Put more water to avoid boiling dry.

11. The salted fish with the fragrance of green pepper is out of the pot. It is served with a bowl of porridge and a tortilla. It is delicious in the world~
