Steamed Shrimp with Enoki Mushroom Vermicelli

First cut off the old roots of the enoki mushrooms, clean them and blanch them with boiling water for 2 minutes, remove them from cold water and control the moisture for later use.

Then soak the vermicelli in boiling water for blanching enoki mushrooms for 1 minute, and then cool them in cold water for later use.

Soak frozen shrimp in cold water for a while to thaw.

After melting, cut off the shrimp, and then use small scissors to cut the back of the shrimp to remove the shrimp thread.

After removing the shrimp thread, put it in a basin, add salt and cooking wine to marinate for a while.

Peel and wash the garlic, then pat and chop it. Put more than half of it in a colander and rinse the mucus of the minced garlic with cold water to control the moisture.

Take a plate and spread the dried vermicelli evenly on the bottom of the plate.

Spread enoki mushrooms with dried water on top.

Then spread the marinated shrimps on the enoki mushrooms in a circle.

Stir-fry the minced garlic in hot oil until golden in color

After turning off the heat, add the remaining minced garlic and mix well.

Spread the mixed gold and silver garlic on the shrimp.

Then put some colored peppers in the middle to embellish the color.

Put it in an opened steamer, cover and steam for 8 minutes.

After 8 minutes, take it out, pour in steamed fish soy sauce and serve.
Tips:
Wash the minced garlic with clean water so that it will not be easy to paste when sautéed.
