In the childhood born in the 1970s, cake was a luxury.
Even if it is a birthday, parents will not be willing to go to a western restaurant to buy a piece for their children.
At that time, ordinary families could not have an oven.
Sometimes my mother will bear sore hands and beat long, long-lasting eggs with chopsticks.
Use an ordinary steamer to steam a plate of chicken cake, there is no cream, and it is not soft enough.
But it is enough to soothe the child's desire.


After many years, I have been able to bake many delicious cakes by myself.
But occasionally, I still miss that piece of steamed cake that is not soft and sweet.

Steamed Spinach Cake

1. Wash the spinach.

2. Smash the spinach into puree with a wall-breaking machine, take 150g, and set aside.

3. Separate the egg whites and yolks.

4. Add about 80g of fine granulated sugar to the egg whites in 3 times, and beat with a whisk until the egg whites are in a wet foaming state.

5. Add the egg yolks with the remaining fine sugar and beat until thick and white. Add spinach puree and milk and mix well.

6. Sift the low powder, baking soda, baking powder and salt, and mix well with the spinach egg yolk paste.

8. Add 1/3 of the meringue to the batter and mix well.

9. Spread the mixed spinach cake batter into a paper cup, 8 to 9 minutes full, and sprinkle the surface with your favorite nuts and dried fruits.

10. The induction cooker uses the stew mode, add water to the pot, and choose high heat to boil the water first. After the water boils, place the steamer with the paper cups on the pot and steam, adjust the fire power to 1000 watts, and steam for 12-15 minutes.

11. Take out the cake as soon as it is steamed and let it cool before serving.

Tips:

1、This steamed cake tastes between Chinese steamed cake and cake. This recipe can also be baked in the oven.
2、I use Midea induction cooker, please adjust the method appropriately according to your own induction cooker.
3、If you use an ordinary steamer to steam the cake, it is best to cover the pan with gauze to prevent the steam from dripping into the cake.
