Stewed Beef Brisket with Kelp and Potatoes
1.
Cut the sirloin into pieces, don’t be too small, cook it under cold water, blanch it in cold water, rinse and set aside!
2.
The “rice bucket” buys a whole piece of fresh kelp, remove the dirt on the surface, cut a long section, roll it into a solid long cylinder, tie it into a knot as shown in the figure, and then cut the sections one by one, and blanch them for three times. For four minutes, let cool water, drain the water and set aside! (Dried kelp or ready-made kelp can be used)
3.
Peel and cut potatoes, soak in water to prevent blackening, set aside! (Generally, potatoes are cooked or stewed. Potatoes are not completely cut with a knife. Potatoes in one hand, a knife in the other hand, insert the potatoes a little bit with the knife edge, and then use the knife edge to use the strength of the wrist to directly separate the potatoes. One side is regular, the others are irregular, this kind of potato is delicious and delicious)
4.
Stir the peppercorns in a hot pot with cold oil over a low fire until brown, remove and discard. Turn on medium heat and add green onion, garlic, aniseed, cinnamon and bay leaves (not available at home, use sana ginkgo, etc.). After frying the sirloin until the surface is slightly yellowed, pour a tablespoon of cooking wine along the side of the pot, add a tablespoon of light soy sauce and half a tablespoon of dark soy sauce, stir-fry evenly, pour in hot water without the ingredients, cover and cook over high heat. Turn on, turn to medium and low heat for 30-40 minutes!
5.
When the sirloin is basically soft and rotten, add potatoes and kelp, consume a spoonful of oil, 5 crystal sugar, a little salt, and a little chopped freshly ground pepper. Stir-fry evenly, cover the medium-low heat and cook for six or seven minutes. (If the potatoes are cut bigger, take a longer time)
6.
After six or seven minutes, the juice can be collected after opening the lid over the fire! "Rice bucket" likes dry fragrance without soup, all the essence is absorbed by the ingredients! (If you want to cook rice or noodle soup, you don’t need to collect the juice, you can turn off the heat in this step)
