Stewed Chicken Soup with Hericium
1.
Prepare the materials.
2.
Cut the chicken into pieces.
3.
Soak the Hericium erinaceus in warm water for 2~3 hours. During this time, squeeze the water in the Hericium erinaceus, change the water again, and repeat several times (press it with a plate to prevent it from floating)
4.
The soaked Hericium erinaceus uses scissors to cut off the hard old roots of the pedicles and tear them into small pieces.
5.
Put the chicken and ginger into the pot together, add water to boil for 4 minutes, remove the blood and rinse it out and set aside.
6.
Pour in the blanched chicken nuggets, ginger slices, soaked hericium edodes, ginger slices, red dates, and dangshen. Bring to a boil over high heat and simmer for 1.5 to 2 hours.
7.
Finally, add medlar and salt.
Tips:
The hericium should be fully soaked, and a little cooking wine can be added to the soup to neutralize the bitterness of the hericium itself;
