Stewed Lamb Leg

Prepare food. Peel the onions, cut the dill stalks and tie them into bundles for later use.

After washing the leg of lamb, soak in clean water for 30 minutes

After soaking the leg of lamb, rinse it several times in clean water, put it in a soup pot, and pour in clean water. 3 fingers of water over meat noodles.

Add a whole onion, increase the heat and cook until the water boils

Add dill stalks and a handful of peppercorns, turn off the heat and cover and simmer for 1 hour. Scoop out the onion and dill stalks.

While stewing lamb, cut potatoes and carrots into pieces on the hob

After the lamb is simmered, add carrots and cook for 10 minutes

Add potatoes and cook for 10 minutes

Squeeze half a lemon into juice, add a spoonful of egg yolk and stir into egg yolk juice

Add a tablespoon of mutton soup to the egg yolk juice and stir well, then pour the egg yolk juice into the mutton soup and mix well

Add salt and cook until the water is boiling, then turn off the heat

Sprinkle some chopped coriander and chopped dill leaves before serving
Tips:
Lamb must be washed and soaked in water. Make sure to fill enough water for lamb stew at one time, and do not add water when cooking. You can also add 1-2 pieces of bay leaves when stewing. If you like the sour and spicy taste, add some lemon juice and pepper to the taste.
