Stewed Pork Ribs with Sword Beans

Cut the ribs into small pieces, blanch them in water and pick them up, wash off the blood and set aside.

Remove the two ends of the beans, wash them, then put the beans in the oil and stir-fry for 3 minutes, then remove them and put them on the plate for later use.

Pour an appropriate amount of oil in the pot, stir fry the star anise, ginger slices, garlic slices and chili until the aroma overflows.

Pour the ribs into the pot, stir-fry for 2 minutes, add cooking wine, sugar, dark soy sauce and light soy sauce in sequence, continue to stir-fry to make the ribs evenly colored.

Pour the beans into the pot and stir fry with the ribs for about 3 minutes.

Add water as high as the ribs, cover the pot and bring to a boil over high heat, then turn to medium heat and simmer for 20 minutes, then add an appropriate amount of salt, then turn to low heat and simmer for 20 minutes.

When the soup is dried, the pot can be started.
