Stir-fried Bacon with Garlic

Cut green onion into sections, slice ginger and garlic, pepper, dried chili, Pixian watercress, sugar and set aside.

Wash the garlic seedlings and cut into sections. Pay attention to separate the white roots of the garlic seedlings from the green leaves of the garlic seedlings.

Peel the bacon (I don't like it because the skin is a bit hard) and cut into evenly thick slices.

Heat a little bit of bottom oil in the pan, add the bacon slices to medium-low heat and fry until the oil is hot. My bacon is too fat, so a lot of oil comes out of it.

Stir in appropriate amount of Pixian watercress and stir-fry to make red oil.

Stir fry the scallion, ginger, garlic, pepper, and dried chili to create a fragrance.

Change to high heat, pour in the white roots of the garlic seedlings and fry until broken.

Add the green leaves of the garlic sprouts, add cooking wine and sugar and stir well.

Turn off the heat and transfer the chicken essence to the pot.

1. Regarding the side dishes, you can really do whatever you want. You can use garlic sprouts, green peppers, garlic moss, onions, carrots, dried tofu, whatever you like.
2. Regarding the seasoning, I used Pixian Douban this time. If you want, you can also add soy sauce, vinegar, or tempeh, or just leave nothing at all. Each has its own flavor and is equally delicious.
3. If you don't like spicy, you can skip pepper and chili.
4. The bacon is already very salty, so you must put less watercress or refined salt, according to your personal taste.
5. Don't fry the garlic seedlings for a long time. If they are too soft, they won't taste good, just cut off.
