Stir-fried Bamboo Shoots with Glutinous Vegetables (fuzhou Specialty)

Shell the bamboo shoots, cut off the older parts of the head, wash them, and slice them. In addition, prepare Minqing fermented vegetables.

Bring water to a boil in the pot, put the sliced bamboo shoots in and blanch them so that they can be numb. (This step cannot be omitted, otherwise the bamboo shoots will taste numb)

Heat the oil in the pot, put the bamboo shoots that have been blanched to remove the hemp, and fry for a while.

Add Minqing fermented vegetables and stir fry for a while.

Put an appropriate amount of salt in it and stir fry. (You don’t need to put too much salt, because the bad vegetables have a salty taste)
