Stir-fried Braised Whole Duck

1. Wash the duck and cut into pieces.
2. Change the knife with ginger, garlic cloves, and millet pepper.
3. Blanch the duck chunks in water and rinse off the foam.
4. Put the rapeseed oil in a hot pot, add the fat duck meat first, stir yellow, and stir out the oil.
5. Pour in all the duck meat, stir-fry on high heat, and stir-fry.
6. Add dried rice pepper, garlic cloves, and half of the ginger slices and sauté until fragrant.
7. Stir and stir well.
8. Pour the beer.
9. Bring to a boil on high fire.
10. Pour into the casserole.
11. Cover the pot and simmer for 45 minutes.
12. Put the other half of the ginger slices on top when it cooks for 30 minutes.
13. Stir thoroughly.
14. Add millet pepper and salt.
15. Cover the pot again.
16. Put in light soy sauce and dark soy sauce when it is still 5 minutes away.
17. Put the oyster sauce, stir well, cover the pot, boil, turn off the heat, and simmer for a few minutes before opening the lid to eat.
18. Finished product.
