Stir-fried Cauliflower with Tomatoes (summer Appetizer)

First break the cauliflower into large flowers, and then soak them in salt water for 10 to 20 minutes. (The purpose of soaking in salt water is to remove residual pesticides and hidden cabbage insects)

Cut the tomatoes into small pieces while the cauliflower is soaking, and cut the garlic into small pieces at the same time.
After the cauliflower is soaked, rinse it with clean water, then break it into small flowers and remove it and set aside with other ingredients for later use.

Add a proper amount of water to the pot and boil. After the water boils, add a small spoonful of salt and then add the flowers. Take out about a minute or so (the flowers will not be crispy if the time is too long), and finally rinse with cold water.

Add a little oil to the pot, add garlic slices and fry until fragrant after the oil is boiled (fry on a medium-to-low fire, the garlic slices will burn easily if the fire is high). After frying for more than 10 seconds, you can add the cut tomatoes to make the soup. Next is the key point. You have to crush the cut tomatoes with a shovel to make the soup easier. At the same time, add a spoonful of sugar and an appropriate amount of tomato sauce.

After the tomatoes are out of the soup (the soup is shown in the picture), you can add flowers and stir fry.

Since the flowers have been blanched with water before, you must quickly stir-fry the flowers again (they will not be particularly crispy if they are fried for a long time) and finally add a spoonful of soy sauce and a spoonful of salt, then stir a little to get out of the pot. .
Tips:
#After cutting off the bottom of the flower stem, it is recommended to break it by hand, because if you cut it, the flower clusters may be chopped up and a lot of flower particles will be scattered, which is not easy to cook. And I personally feel that the hand-breaking taste will be better.
#Some tutorials suggest not to blanch the flowers with water, but personally feel that if you first blanch them with water, it will not affect the taste, and it is equivalent to the second "disinfection" of the pesticides on the surface of the flowers. Just too long.
#This dish starts with hot pot and fragrant ingredients. I personally think that garlic is enough. Of course, if you like to add green onions and ginger, you can also.
#暴香After adding tomatoes, there will be some oil splashes, so be careful.
#When making the soup, it is not recommended to add water. If you add water, the taste will be much weaker. If you feel that the tomato sauce is not too much, it is recommended to add an appropriate amount of tomato paste to increase the amount of soup.
#It is not recommended to peel the tomatoes used for soup, because the oiled tomatoes are very nutritious, and the skin is even more so.
#It is not recommended to replace soy sauce with dark soy sauce. The former will be much darker in color, which will affect the final appearance of the ingredients.
#The soup made by my method is thick enough, so there is no need for special soup.
