Stir-fried Celery with Dried Tofu in Sauce
1.
Ingredients: 2 pieces of celery, 2 pieces of dried tofu,
Accessories: vegetable oil, salt, light soy sauce, chicken essence
2.
Remove the leaves of the celery, wash it several times, and cut it into sections. Because it is a large stalk of celery, it needs to be blanched for a better taste. Dry the tofu and cut it into strips. Put the celery segments in boiling water and cook them until they change color and immediately scoop them up, over cool water, so that the celery is crispy, tender and delicious.
3.
Heat the pan with cold oil, heat 80% of the oil, add the tofu and fry until slightly yellow, so that it will not break easily. Stylish and good-looking.
4.
Set aside the fried tofu and stir-fry the celery section over high heat to create a fragrance
5.
Then stir-fry the celery segments and dried tofu with a little salt to create a flavor
6.
Set them aside (optional, so that the soy sauce has a rich aroma), and make your own soy sauce and chili sauce, and stir-fry the spicy flavor of the sauce.
7.
Then fry all the ingredients together, add light soy sauce and chicken essence to give a uniform aroma and spicy taste
8.
Add chicken essence and stir fry evenly
9.
Stir-fry for about a minute to get out of the pot
Tips:
1. Don't boil celery for a long time, pick it up when it changes color, so it's refreshing and crispy
2. Soybean paste must be fryed to get the flavor of the sauce before it can be stir-fried with other ingredients
